Jasmine Honey

Jasmine honey is a great winter standby for coughs and sore throats. It is also an excellent remedy for singers and public speakers - or anyone prone to voice loss or hoarseness. To make this winter saver, you’ll need:
- 300ml clear honey
- 15g fresh white jasmine flowers or 7g dried flowers(both free from pesticides)
- Muslin
- Glass Jar
Method:
1. Pick fresh flowers as soon as the dew evaporates on a dry sunny morning.
2. Place the honey in a heatproof basin over a pan of simmering water.
3. Stir in the fresh or dried flowers.
4. Infuse for 30 minutes, stirring occasionally.
5. Strain the jasmine honey through muslin, then pour it into a glass jar.
If stored in a cool, dark place, the honey will kep for at least 6 months.
Dosage: Take 1 tsp three or four times a day, or as required
